Welcome to The Pumamouse Website's "RECIPES" webpage.  The links listed below will enable you to view a variety of my favorite recipes, some of which were shared with me by family or friends, and many of which were taught to me by the bestest cook in the entire universe...my Mom.  Of course, I realize that most people believe their own mother's cooking to be the very best...the mark of excellence by which all other culinary efforts are judged...and we are all entitled to our opinions.  However, to date, my high assessment of my Mom's cooking has never been disputed by those who have been fortunate enough to taste the truth of my claim.  Nothing fancy...just pure palatal bliss.  There will also be a few recipes of my own concoction.  Don't worry...the distinctions of origin will be clearly made!

For starters, a simple recipe for cookies is offered below.  It originally came to me many years ago through a friend, and I modified it to suit my personal taste.  Enjoy!

COWBOY COOKIES

2 Extra Large Eggs (or Egg Substitute)
1 Cup Sugar
1 Cup Packed Brown Sugar
1 Cup Butter
1 teaspoon Vanilla
1 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1/2 teaspoon Salt
2 Cups Flour
2 Cups Regular Oats (NOT Quick-Cooking)
6 ounces Chocolate Chips (Milk Chocolate Chips)
1 Cup Chopped Walnuts (Optional)

Mix first 5 ingredients with electric mixer (medium speed) until fluffy.  Add remaining dry ingredients in the order listed, stirring well with spatula.  Dough should be very stiff, so add more Oats if necessary.  Drop about 1/4 Cup of dough onto greased cookie sheet.  Put only six or eight mounds of dough per sheet, staggering them about three inches apart.  Cookies will spread as they bake.  Bake in oven preheated to 350 degrees Fahrenheit for 10-15 minutes, or until cookies are golden brown but still spongy when touched on top with fingertips.  (It can take up to 20 minutes sometimes, but don’t over bake.)  Let the cookies cool slightly before removing them from cookie sheet, then finish cooling on racks.  Makes about 20 big cookies, each about 4-5 inches in diameter.  Cookies can be made smaller, but remember to reduce baking time accordingly.

NOTE:  Everyone seems to gobble these cookies up, so I usually double this recipe and add up to one extra cup of oats to make the dough stiff.  Also, if you do not want to use the Chocolate Chips, you can substitute 1 Cup Raisins for a double batch, (or 1/2 Cup for a single batch).  I usually make the cookies smaller, dropping the dough onto the cookie sheet by heaping Tablespoonfuls.  This makes a good sized cookie which is easier to store in regular containers.  Also, if you don’t like Walnuts, Pecans can be used, or the nuts can be completely omitted.  However, if the nuts are completely omitted, these tasty treats should then be more accurately referred to as "Cowgirl Cookies".  Squeak!!!
