WARNING: THIS RECIPE IS 100% FAT-INCLUSIVE AND COMPLETELY ADDICTIVE. IT IS NOT INTENDED FOR ANYONE WHO IS HOPING TO LOSE WEIGHT OR MAINTAIN THEIR TRIM APPEARANCE. PREPARE AND ENJOY THIS TREAT AT YOUR OWN RISK! THE PUMAMOUSE MOM'S RICE PUDDING 1 Cup Raw Rice 1/2 Cup Water 2 Quarts Milk 1 1/4 Cup Sugar 1/2 teaspoon Salt 4 Large Eggs Bring rice and water to a quick boil, just to beginning breaking down the starch in the rice, remove from heat and cover. Bring milk to a gentle boil over low heat. Add rice, sugar, and salt. Simmer for 30 minutes, or until rice is cooked, stirring often. In a separate bowl, beat eggs, then add them gradually to the rice mixture, stirring constantly to blend. Continue to cook over low heat for a few more minutes, until mixture thickens. Remove pudding from heat and let it settle for one minute. Pour into glass bowl. Allow to cool for 3-4 minutes, then sprinkle with cinnamon and refrigerate. Pumamouse Notes: If you love the taste of cinnamon, you can add a teaspoon or two of ground cinnamon to the milk/rice/sugar/salt mixture while it is cooking for extra flavor. If you are a confirmed chocoholic, you can also add 1/4 - 1/2 Cup Cocoa Powder and stir well just before adding the beaten eggs. The result is Chocolate Rice Pudding! Squeak! The original recipe and the cinnamon/chocolate variations are delicious when chilled, but they are equally yummy when served warm. If the pudding becomes too thick for your palate, try adding a little fresh cream. Another Note: For anyone who is watching their cholesterol/fat/caloric intake, skimmed milk can be used instead of whole milk...the amount of sugar can be greatly reduced or an alternative sweetener can be used...an egg substitute or equivalent measure of egg whites may be used instead of whole eggs...and the cocoa powder and fresh cream can be eliminated.
